The cm part is what will bring each body element to float (i.e. buyoancy). When a body element is higher in the air than 0.05 meters, then it has no buyoancy at all. Otherwise, it will depend how immerged the element is.

I just started working with V-REP and I have lots of doubts. The first one is how can I make this pool that is done in this simulation? Where should I put those scripts you wrote?

Hello,

did you have a look at the demo swimming robot, Models/robots/mobile/ACM-R5.ttm?
Have also a look at this buoyancy example scene.

I was able to put is to work. Not perfectly well, but it floats and moves.

One more question. How can I do that tank with water showed in the video?

The tank with water is just visual effects. Transparent textures that are shifted dynamically.
